Just want to give a shout out to a group of students here, several of whom I have had in class, who are doing a great series of cooking shows on Youtube.  Now into its second season, Cooking with Steven focuses on how college students, and other people with limited time and resources, can make some good food.  I especially like the most recent episode on Mapo Dofu, embedded below.  And I can attest to the fact that Steven and Danny have read and understand several classic texts of ancient Chinese philosophy!

    I still haven’t forgotten the egg dumplings — I just need a metal ladder and a gas stove!
    Before that, I’ll make do with meat buns… just you wait 🙂

    I really like your style, Steven. And, I’d like to share my fried tofu:
    Buy the very firmest tofu. Cube it in pieces about an inch and a half. Roll it in a mixture of flour, salt, pepper, and smoked paprika. Place in hot oil (I like canola with a bit of sesame oil) and don’t turn until it starts to get quite golden brown. Using tongs will help keep it from breaking up.
    This is good with so many things, in a salad, or stir-fry, or floating on soup. I even like them plain, as a snack or appetizer.
